What is Epsilon Polylysine?
Polylysine is a homopolymer of L-lysine,
as a natural, toxicologically safe, antibacterial food
preservative. It is a natural substance from microbial
metabolism. E-polylysine can inhibit the growth of
Gram(+) and Gram(-) bacteria such as E. Coli and
Bacillus subtilis, yeast, moulds, lactic acid bacteria,
thermophilics such as B,stearothermophilus,
bacillus-bacilli., and Staphlacoccus aureus, ect¡
Compared to traditional preservatives, E-polylysine
shows the advantages on safety, good heat tolerance and
solubility in water, and extensive antimicrobial ability
against Gram+ bacteria and fungi. It can be sterilized
along with the raw material, especially as the safe food
preservative without side-effects.
Physical properties:
¦Å-Polylysine is slightly bitter, hygroscopic, light
yellow powder.
It is soluble in water, slightly soluble in ethanol,
insoluble in organic solvent such as ethyl acetate,
ether, ect...
The molecular of E-Polylysine is a straight chain
polymer of L-lysine.
Its activity is not affected by pH, and stable when
heated (120C for 20 min).
It is soluble in water, slightly soluble in ethanol,
insoluble in organic solvent such as ethyl acetate,
ether, ect.. It can decompose for lysine within the
body, and can be completely digested absorption by the
body.
Usage:
E-Polylysine was generally recognized as safe as food
preservative by FDA in October, 2003.
It is widely used as food preservation in rice, noodles,
cakes, snacks, and ice creams, salad, canned foods and
meat products.It can be automatically hysrolized into
nutritive amino acid, lysine without any harm to the
body. It can also be used as a carrier for
pharmaceutical molecules. With good absorption of
liquid, it is used in SAP to produce sanitation
products, such as sanitation napkin and diapers.
You may confect the 5-10%¦Å-Polylysine solution with cold
boiled water or distilled water, then put it into the
food and mix fully. If it is used together with other
food preservatives, can attain better effect.
